tiramisu cupcakes!

hello yummy!

these came out soooo good!!

even the kids LOVE them!

tiramisu cupcakes

1 1/4 cup flour

3/4 cup sugar

1 1/2 teaspoon baking powder

1/4 teaspoon salt

3 tablespoons butter softened

2 tablespoons evoo* 

*i used filippo berio i received as a bzz agent!

1/2 cup light cream (whole milk can be used)

1/2 teaspoon vanilla extract

1/4 tsp almond extract

1 egg plus 1 white

1 tasters choice instant coffee envelope

mixed with

1 tablespoon hot water.

mix dry ingredients, add butter, evoo

and extracts, mix 1 minute. add eggs, mix, scrape 

bowl, add coffee, mix for 1 minute on med high.

frosting

8oz marscapone at room temp

12oz heavy cream

1 3/4 cup powdered sugar

mix marscapone and sugar until

blended. whip cream until almost "whipped

cream" add marscapone and sugar mixture

and mix until smooth.

frost cupcakes and dust with

cocoa powder

when i first

i was a little intimidated...

watching their big sister in the

memorial day parade!

ack! i'm a day late!!!

here is may take on this weeks

yes this week is an awesome 2 pager,

but i really wanted to scrap

alexas birthday day pics!

i used my feb

scraptastic club feb kit for this one!

greek yogurt frozen dessert

happy hump day all!

are ready for something yummy??

have some extra greek yogurt in the fridge?

MAKE THIS!!!!

i was searching for a good

frozen greek yogurt recipe.

couldn't find one, so made this one up!

3 5.3oz containers of dannon oikos greek yogurt

*i used 1 plain and 2 strawberry

3 tbsp light corn syrup

3 tbsp sugar

2/3 cup half and half

2/3 cup whipping cream

mix all ingredients with a whisk

until smooth and combined well.

place in ice cream maker and

follow makers directions.

i place in a container in the freezer

because i like it a little harder.

enjoy!

as a bzz agent i was given a

great opportunity to

let bella try this amazing

GRAIN FREE food!

bella is an outdoor cat

who loves his prey (YUCK)

i DO NOT condone letting

domesticated cats out,

but bella used to rip all

our screens to let himself outside!!

he doesn't love cat food,

but he is actually eating this food! yay

time for another nuts about sketches sketch!

i used my scraptastic club

"celebrate life" kit and add-on

tfl!

frosting/meringues double duty!

happy sunday all!

are you ready for some yummies?

well this recipe is a two for one!!

white fluffy icing.....

and

toasted marshmallow meringues

i made a dozen yummy vanilla cupackes

make holes in them with a skewer

mixed jello with 1 1/4 c boiling water

and poured 1 tbsp over each cupcake

and now for the icing...

1/3 c water

1c sugar

1/4 t cream of tartar

1 t vanilla

2 egg whites

bring water, sugar and cream of tartar to a boil.

whip egg white to just before a soft peak.

add vanilla and whip until soft peaks form.

while mixer is running pour in (still hot)

water/sugar mixture and beat until

stiff peaks form. move to a piping

bag and frost cupcakes or a cake.

now pipe meringues onto a lightly greased

pan. bake at 350 for 10 minutes. lower oven

temp to 250 and bake for 30 minutes.

shut off oven heat crack open door and

let sit in oven for an hour.

there you go 2 desserts in one!

i had to cut those cute

hot air balloons out and stitch on them!

used the mist on this one...

oooh tape and mist! what is there not to love?!?

a SMASHING cover!

i bought a new smash book

to replace the one alexa

"borrowed" from me lol!!

i can't tell you how much fun it was to paint!

i used my twinkling H2O's and

stickles, and am sooo happy

with the final product!

i added a little spritz of Mr Hueys white

over the paint enhance the aged look a bit.

weekend baking... zucchini cupcakes!

yes, i did say

zucchini cupcakes!!!

and boy are they yummy!!!

i had to make a few

mini's for the boys to snack on...

see told you they LOVED them!!!

zucchini cupcakes with

lime cream cheese buttercream

6 t butter

3/4 c sugar

2 t light brown sugar

1 egg

1tsp vanilla

1 cup ap flour

1/4 cup ww flour

1/2 tsp baking powder

1/2 baking soda

1/4 tsp salt

1/2 cup plain greek yogurt

zest of 1 lime

1 cup shredded zucchini

cream butter and sugar. mix in egg yogurt and vanilla

sift dry ingredients, mix in 3 parts.

fold in zucchini and lime zest.

bake at 350 until done (approx 18 mins)

frosting

4 oz softened cream cheese

4t butter softened

2 cup powdered sugar

the juice and zest of 1 lime

beat cream cheese and butter until creamy

add remaining ingredients and mix

until smooth
