this is sooo yummy!! cauliflower "hummus", yes healthy and yummy!!
so easy to make!
preheat oven to 450
cut up 1 head cauliflower
place on baking sheet
2 cloves of garlic
coat with evoo, salt and pepper (i add red pepper flakes too)
roast until tender
add cooled cauliflower and garlic to blender or processor.
add 2 more tbsp evoo and a little vegetable stock if needed to blend easier.
