these came out soooo good!!
even the kids LOVE them!
tiramisu cupcakes
1 1/4 cup flour
3/4 cup sugar
1 1/2 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons butter softened
2 tablespoons evoo*
*i used filippo berio i received as a bzz agent!
1/2 cup light cream (whole milk can be used)
1/2 teaspoon vanilla extract
1/4 tsp almond extract
1 egg plus 1 white
1 tasters choice instant coffee envelope
mixed with
1 tablespoon hot water.
mix dry ingredients, add butter, evoo
and extracts, mix 1 minute. add eggs, mix, scrape
bowl, add coffee, mix for 1 minute on med high.
frosting
8oz marscapone at room temp
12oz heavy cream
1 3/4 cup powdered sugar
mix marscapone and sugar until
blended. whip cream until almost "whipped
cream" add marscapone and sugar mixture
and mix until smooth.
frost cupcakes and dust with
cocoa powder
