and now for the dish...
mushroom and shrimp udon
i made a great vegetable stock
for this, so quick and easy too!
veg stock
stock pot 3/4 full of water
1 onion whole
1 cup grape tomatoes
1 cup carrots
1/2 tbsp mrs dash
(i leave the skin on the onion color!)
simmer for 45 minutes, strain, enjoy!
1 lb shrimp
1/2 tsp 5 spice
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
2 tbsp toasted sesame oil
(marinade shrimp in the above for an hour)
1 cup sliced mushrooms
1/8 cup scallions sliced
2 7oz package udon noodles cooked & drained
simmer stock with mushrooms & scallions
saute shrimp in vegetable oil
when shrimp are cooked, place noodles in
bowl add broth and shrimp!
the kids LOVED IT!!!
