hello friends! long time no post!

sorry it's been so long. i was having og on issues.

then the end of school, more strep and the the 

beginning of summer just took hold of all off my time!

i have still been keeping very busy with scraptastic club

and nuts about sketches!

this was my june challenge for scraptastic club...

i honestly thought this was the funniest pic i've seen

in forever!!! 2 things i LOVE, makes me so happy every

single time i look at this pic! i used the oh snap june

kit and add-on for this one!

and now a few july pages!

i got it all the month (think you hubby for the gift of scrappy)

i can't wait to share more with you

this month! i am so tired now i can't type

anymore. spent the day baking and making

it a special day for wil's half bday today. 

i cannot believe he is 7 1/2! my sweet little guy!

double berry oatmeal bars

double berry oatmeal bars

2 cups oats (any kind will do)

3/4 cup whole wheat flour

1/2 cup brown sugar

3 tbsp honey

1/2 t cinnamon

1/2 t salt

3/4 cup oil (i used smart balance)

2 eggs

1/4 cup cranberries*

1/2 cup blueberries*

*i use fresh or frozen

mix all ingredients in a bowl, bake at 350 for 20 minutes

let cool, cut into bars and enjoy!

i adapted this recipe from this 

oatmeal breakfast bars recipe

case of tonsillitis!  i have been 

on so much medicine and soooo tired!

hello scrappy friends!

here is my take on the left side of this weeks 

2 page sketch from nuts about sketches!

I used the may faded jeans

kit and add-on from 

scraptastic club!

sadly i haven't had much scrappy time

lately. now with my second bought

of strep in 3 weeks, and a

sinus infection :( it's hard to be

scrappy when you're feeling crappy!!

half wheat grilled.....

happy thursday all!

i wanted to share a new recipe 

with you all today!

half wheat griiled....

this recipe can be just 

a grilled flat bread, pizza crust, naan...

anything you need a yummy

flat bread for, this is a GREAT one.

1pckt active dry yeast

1 cup warm water

dissolve yeast on water for 5 minutes

1 tbsp honey

add to water/yeast and let sit for 10 mins

1 slightly beaten egg

2 tbsp milk

2 tbsp evoo

1/4 cup sugar

2 tsp salt

2 1/4 cups white wheat flour

2 1/4 cup ap flour

1 tsp granulated garlic

in your stand mixer with hook attachment

mix all ingredients together on speed 2

for 5 minutes.

cover and let rise 1 hour.

roll into small balls

(for larger breads *pizza size i make 7)

cover and let rise 1 hour.

roll out and grill :)

enjoy!

LOVE this weeks nuts sketch!!

i used the march scraptastic club kit

for this one!

it scanned a little wonky, but it is not IRL! lol

pics are from my birthday

dinner from last year. of course i'm the

one taking the pics lol

we went to one of our favorite 

restaurants in town

tomatillo!!

tiramisu cupcakes!

hello yummy!

these came out soooo good!!

even the kids LOVE them!

tiramisu cupcakes

1 1/4 cup flour

3/4 cup sugar

1 1/2 teaspoon baking powder

1/4 teaspoon salt

3 tablespoons butter softened

2 tablespoons evoo* 

*i used filippo berio i received as a bzz agent!

1/2 cup light cream (whole milk can be used)

1/2 teaspoon vanilla extract

1/4 tsp almond extract

1 egg plus 1 white

1 tasters choice instant coffee envelope

mixed with

1 tablespoon hot water.

mix dry ingredients, add butter, evoo

and extracts, mix 1 minute. add eggs, mix, scrape 

bowl, add coffee, mix for 1 minute on med high.

frosting

8oz marscapone at room temp

12oz heavy cream

1 3/4 cup powdered sugar

mix marscapone and sugar until

blended. whip cream until almost "whipped

cream" add marscapone and sugar mixture

and mix until smooth.

frost cupcakes and dust with

cocoa powder

ack! i'm a day late!!!

yes this week is an awesome 2 pager,

but i really wanted to scrap

alexas birthday day pics!

i used my feb

scraptastic club feb kit for this one!

greek yogurt frozen dessert

happy hump day all!

are ready for something yummy??

have some extra greek yogurt in the fridge?

MAKE THIS!!!!

i was searching for a good

frozen greek yogurt recipe.

couldn't find one, so made this one up!

3 5.3oz containers of dannon oikos greek yogurt

*i used 1 plain and 2 strawberry

3 tbsp light corn syrup

3 tbsp sugar

2/3 cup half and half

2/3 cup whipping cream

mix all ingredients with a whisk

until smooth and combined well.

place in ice cream maker and

follow makers directions.

i place in a container in the freezer

because i like it a little harder.

enjoy!
